Yes, it was the outback and there was bush food to forage, but one can't live on wattle seed alone.  There was always "Kuniya" at the Sails Resort to provide divine meals.  And Stephen, our charming waiter, made our meals even more special.

Dinner began with an "amuse bouche" - always fun to amuse the mouth, n'est ce pas?

1st came a dried salmon with a passion fruit sorbet...

The next night featured this other delicacy, a stuffed mushroom with parmesan and bacon...

They served us gluten free bread with olive oil/balsamic vinegar and Dukkah, very popular in Australia.  First you dip the bread in the oil mix, then in Dukkah which is a mixture of various coarsely ground nuts and spices.  Delicious!

Check out this yabbi, prawn and scallop presentation...

And this beautifully rare tuna with crusted edges...

They called this "The Passion Plate" after Epod's special request for a vegetarian plate.  Herbed polenta and roasted veggies...

A beautifully prepared duck with creamed parsnips and baby vegetables...

Salmon in an Asian broth with bok choy...

Wild mushroom risotto with parmesan...

And dessert was gorgeous too.  Check out the spoon made out of thin cookie dough...

And berries...
